The Italian ones are new to me, only because they were never discussed. However there are plenty of records of the ones in action during the Phillipines and South Pacific Campaigns (JFK, etc.) which gave them plenty of heroic press.

Since a kid I always loved the look of the Czech 38 tank, so I had to pick the Marder II.

Jagdpanther. It is beautiful and armed with the 88mm L/71 PaK 43, the same gun fitted to the King Tiger.
There were never many of them, but they made a difference when they were used.Only a Company saw action in Normandy: the 2nd of the 654Battalion. On the 30th July 3 of them attacked 3 Suadrons of Churchills from the 6Th Guards Tank Brigade. Before they realised they were outnumbered and retreated, they destroyed 11 Churchills. Unfortunately, two of these Jagdpanthers had to be abandoned with track damage.

I still have a Matchbox(I think) 1-72 dark blue one I made as a 10 year old. Tracks still attached. Not abandoned at Caumont l’Evente’.

As cool as an elephant is, its to big,bulky, and lacked anti inf def. Weapons.
My to big for my britches non turreted assault vehicle is the Sturm Tiger -
The glorious ISu-152 looked upon it, and said it was wrong, and it smote it from afar with it’s giant ass cannon, and said that it was good.

Close second would be the Nashorn “rhinoceros”.
As for an Assault Gun, I go with StuG III G.

Any of the Panzer aces-they truly destroyed a lot of tanks.
Seriously though, I would choose the Sturmtiger-I just find it interesting how it launches rocket propelled mortars rather than normal shells, even if the vehicle was never used as intended.
